Fire Up That Grill and Get Your Veggies!

One of my favorite summer activities is to fire up the grill and try new recipes. This healthy, simple salad adds a summer flavor to my favorite vegetables.


3 bell peppers, cut in half

1/2 pound of asparagus

1/4 pound fresh mozzarella cheese, cubed

3 fresh vine tomatoes cut in fourths

1 tsp salt, 1/2 tsp pepper

2 tbsp. olive oil

3 tbsp. balsamic vinegar (optional)

Fire up that grill! While waiting for the grill to heat up, assemble peppers and asparagus into mixing bowl, add olive oil, salt and pepper and toss until vegetables are coated. Grill the vegetables over medium heat for 5-8 minutes on each side. Cut the vegetables and assemble in salad bowl, add fresh tomatoes and mozzarella. If your looking to add a sweet twist, add the balsamic vinegar to your salad. I like to serve with grilled chicken for a fully healthy and nutritious meal. Serve and enjoy!
